Are the bristles really soft like description says? Or too sharp to use on skin sensitive dogs?
The bristles are very gentle and not sharp, make sure when brushing you brush away from the skin. Part the fur and brush, if you apply too much pressure you can cause brushburn.
How long are the pins?
The slicker brush pins are 20mm long.
What is the difference between the flat and curved brush?
Booth Flat and Curved Brusshes are for dematting, shedding fur. However, the Curved brush makes coats more fluffy.
How often should I use the Pet Slicker Brush on my dog?

Would the small or medium work for getting under the ears and legs of a standard doodle?

Medium size brush is normally use with dog breeds up to 44 lb. And the Small size brush is for mini and toy dog breeds, cats, and rabbits. Also, you can use the Small size brush in small parts such as paws even in Large dog breeds.
